The Great Hampstead Bark Off

To celebrate ‘The Great Hampstead Bark Off’ dog show being held by All Dogs Matter this weekend on Hampstead Heath, we thought we would share with you our strawberry and coconut dog cake recipe, which is perfect cake for any doggie celebration. We hope you enjoy!
The Cake
1 ¾ cup spelt flour
2 tbs honey (we used local north London honey)
3 eggs
2-3 tbs of coconut oil (melted)
½ cup of desiccated coconut
A handful of fresh strawberries
The Icing
1 cup of coconut cream (refrigerated over night)
3tbsp desiccated coconut
A handful of fresh strawberries
  1. Pre heat oven to 180C/160C fan/gas 4 and line your cake tins with non-stick baking paper. We used ramekins to make our small cake
  2. Sift the flour into a bowl and add the desiccated coconut
  3. Mash the strawberries into a paste
  4. Add the mashed strawberries, eggs and honey to the dry ingredients and start to combine
  5. Slowly start to add the melted coconut oil until you have a smooth batter. If your mixture is too dry add a little more coconut oil and if it is too wet add a little more flour.
  6. Pour the cake batter in to the prepared ramekins or tin (about ¾ full) and cook for 25-30mins or until golden
  7. Once cooked remove the cakes onto a wire rack to cool completely
  8. For the icing simply stir the desiccated coconut into the coconut cream to create the butter style icing.
  9. To assemble the cake, place one cake upside down onto a plate and spread it with half of the coconut butter cream followed by some sliced strawberries
  10. Top with the second cake, topside up and decorate with the rest of the coconut butter cream and strawberries.
